Ingredients
- 2 bison ribeyes (1–1.5 in)
- Kosher salt & pepper
- 1 tbsp neutral oil
- Butter, garlic, thyme
Steps
- Salt steaks 30 min
- Bake at 250°F to ~115°F internal
- Sear in hot cast iron 60–90s/side with oil
- Baste with butter/garlic/thyme; rest 5 min
